These crispy crunchy cauliflower pop-corn pieces dipped in BBQ sauce will have the whole family fooled. They are the perfect nutritious nibbles for kids.
Ingredients:
- 1 small head cauliflower (about 600g), cut into florets
- 1 cup gluten free flour
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1 cup non dairy milk
- 1 1/2 cup gluten free rice breadcrumbs
- 1 packet mingle BBQ sauce
- ¼ cup water
- 1 tablespoon olive oil
Method:
- Preheat your oven to 160ºC (fan forced) and line a large baking sheet with baking paper.
- Cut the cauliflower into small florets, making sure they are all relatively even in size. This is important so they all cook evenly.
- In a medium/large bowl, whisk together the flour, milk, onion powder, salt, pepper. Whisk well so there are no clumps.
- Toss the cauliflower in the batter mixture and use a spatula or spoon to coat them.
- Transfer the coated cauliflower to a bowl of breadcrumbs to completely coat, then place them onto the baking sheet one at a time.
- Bake for 22-25 minutes or until crisp.
- Meanwhile, pour the BBQ sauce, water and olive oil into a large shallow bowl. Mix to combine.
- Dip the cauliflower pieces into the sauce mixture and return to the baking sheet.
- Bake for another 10 minutes and enjoy.
