Crunchy BBQ Cauliflower Nuggets

These crispy crunchy cauliflower pop-corn pieces dipped in BBQ sauce will have the whole family fooled. They are the perfect nutritious nibbles for kids.

Ingredients:

  • 1 small head cauliflower (about 600g), cut into florets
  • 1 cup gluten free flour
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • ¼ cup water
  • 1 tablespoon olive oil

Method:

  1. Preheat your oven to 160ºC (fan forced) and line a large baking sheet with baking paper.
  2. Cut the cauliflower into small florets, making sure they are all relatively even in size. This is important so they all cook evenly.
  3. In a medium/large bowl, whisk together the flour, milk, onion powder, salt, pepper. Whisk well so there are no clumps.
  4. Toss the cauliflower in the batter mixture and use a spatula or spoon to coat them.
  5. Transfer the coated cauliflower to a bowl of breadcrumbs to completely coat, then place them onto the baking sheet one at a time.
  6. Bake for 22-25 minutes or until crisp.
  7. Meanwhile, pour the BBQ sauce, water and olive oil into a large shallow bowl. Mix to combine.
  8. Dip the cauliflower pieces into the sauce mixture and return to the baking sheet.
  9. Bake for another 10 minutes and enjoy.
