This healthy vegan and gluten free banana blondie recipe is so quick and easy to make and completely delicious. With all the texture of blondies, and all the flavour of banana bread - these are a must try. For an extra nutritional boost, we've added Like Milk, Australia's first plant-based milk made from pea protein that has the same levels of calcium and protein as full cream dairy milk. Seriously good!
Ingredients
- 1/2 cup mashed banana
- 1/2 cup peanut butter
- 1/3 cup melted coconut oil
- 1/3 cup maple syrup
- 1/4 cup Australia’s Own Like Milk – Unsweetened
- 2 teaspoons vanilla extract
- 2 cups almond meal
- 2 tbsp ground flaxseed
- 1 teaspoon baking powder
- 1/2 cup (85g) dark chocolate, chopped
Method
- Preheat oven to 160°C fan-forced and line a baking dish with coconut oil
- In large bowl combine the banana, peanut butter, coconut oil, maple syrup and Like Milk
- Add the almond meal, ground flaxseed and baking powder and mix well
- Fold in the dark chocolate then pour into baking dish
- Bake in oven for 25- 30 minutes
