Recipe: Mexican Ceviche

  • 450g fish fillets, cut into cubes
  • 1 medium jalapeno pepper, de-seeded and diced
  • ½ medium capsicum, diced
  • ¼ medium cucumber, diced
  • ½ medium onion, diced
  • 1 medium garlic cloves, minced
  • ¼ cup coriander, fresh, chopped
  • 1 cup lime juice, or enough to completely cover all of the ingredients
  • 1 teaspoon sea salt, to taste
  • 1 medium lime, cut into wedges
  • 1 packet Doña Cholita Topos Corn Chips


  1. Combined all ingredients in a large bowl and season with salt to taste
  2. Cover and refrigerate for 3-4 or more hours before serving
  3. Service with lime wedges and Doña Cholita Topos Corn Chips
