My Day on a Plate: Happy & Whole Author, Magdalena Roze

Magdalena is a mum to 2 year old Archie with another bub on the way! She made the sea change from Sydney to beautiful Byron Bay about 3 and a half years ago so her partner (who is a chef and restauranteur) could realise his dream of opening a restaurant on a farm.

She is a journalist and meteorologist and presented the news and weather on TV nationally before they moved. She also has a massive passion for food and has just released her first cook book Happy & Whole where she shares her favourite wholefood recipes and tips for living a more natural life.

Magdalena says so much of this has been inspired by her beautiful home and community in Byron Bay. She also has a food podcast “The Pass” where she interviews top chefs and food personalities who take her on a journey to their favourite place to get their little black book of the best places to eat and find out what makes them tick throughout the food they eat.

Clearly Magdalena is a very busy and passionate woman so we were thrilled to get a peek into her typical day on a plate - enjoy!




I wake up at 6am with my son Archie and if I’m doing the lighthouse walk or a yoga class I’ll make a blueberry smoothie to give me some energy. I’m usually not that hungry but as I’m pregnant I’m conscious about making sure that I have enough fuel to get around and make a baby! The smoothie will usually consist of a handful of blueberries, almond milk, some avocado and coconut yogurt for creaminess, almond butter and chia seeds.



By 10am I’m hungry so I might have a “bowl” from one of my Byron local cafes or make one at home with brown rice, eggs, kraut and whatever veggies I have as well as a flat white.



I usually make my son a little ploughman’s with cut up veggies like cucumber, avocado and tomato, cheese, olives, kraut and boiled eggs or grilled chicken, so we’ll share one together on the deck.


Afternoon Snack:

Archie and I do a lot of cooking which he just loves so we’ll often bake something like my jumbo breakfast cookies, pumpkin bread or blueberry buttermilk muffins which the whole family can snack on throughout the week. And we’ll have one ourselves fresh out of the oven, mine usually with a cup of herbal tea.




This varies a lot but it’s pretty much always something that’s quite easy, wholesome and will feed the whole family. One of our family favourites is my one-pot wild rice and chicken pilaf which is fragrant, hearty and a little spicy and only takes 15 minutes to prepare. It’s delicious with a dollop of minty cucumber yoghurt, fresh coriander and squeeze of lime. Archie devours it! Or my one-pan whole baked snapper, which is inspired by the farmer’s markets produce I get in Byron including fennel, tomatoes, olives and capers. Because it’s baked in sauce, the fish is always moist and cooked beautifully. The less washing up the better! I like to have a cup of camomile tea before bed.
