Raspberry & White Chocolate Blondies

Try this blondie recipe when you're craving something super sweet and fudgey. Add in all your favourites... choc chips, coconut, and peanut butter if you're feeling extra cheeky.

Ingredients - Makes 18

1/2 cup coconut oil, melted and cooled
1/2 cup coconut sugar
1 egg, at room temperature
1 egg yolk
1 teaspoon vanilla extract
1 1/2 cups blanched almond meal
2 tbsp buckwheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup white chocolate chips
1/2 cup raspberries (fresh or frozen)
Coarse sea salt, for sprinkling on top

Method:

  1. Preheat the oven to 160c - line a medium sized brownie tin with parchment paper and set aside.
  2. In a large bowl whisk together the coconut oil, brown sugar, egg, egg yolk and vanilla extract until smooth and creamy.
  3. In a separate bowl, whisk together almond meal, buckwheat flour, baking soda and salt. Add dry ingredients to wet ingredients until well combined. Fold in the raspberries and white chocolate chips.
  4. Spoon blondie batter into the tin and smooth evenly. Bake in the oven for 20 mins before letting cool and slicing.
