Try this blondie recipe when you're craving something super sweet and fudgey. Add in all your favourites... choc chips, coconut, and peanut butter if you're feeling extra cheeky.
Ingredients - Makes 18
1/2 cup coconut oil, melted and cooled
1/2 cup coconut sugar
1 egg, at room temperature
1 egg yolk
1 teaspoon vanilla extract
1 1/2 cups blanched almond meal
2 tbsp buckwheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup white chocolate chips
1/2 cup raspberries (fresh or frozen)
Coarse sea salt, for sprinkling on top
Method:
- Preheat the oven to 160c - line a medium sized brownie tin with parchment paper and set aside.
- In a large bowl whisk together the coconut oil, brown sugar, egg, egg yolk and vanilla extract until smooth and creamy.
- In a separate bowl, whisk together almond meal, buckwheat flour, baking soda and salt. Add dry ingredients to wet ingredients until well combined. Fold in the raspberries and white chocolate chips.
- Spoon blondie batter into the tin and smooth evenly. Bake in the oven for 20 mins before letting cool and slicing.
