#####

These little bites of goodness are made from minimal ingredients (most of which you already have at home, otherwise you can check out the GoodnessMe Shop) and are super easy to whip up! We also love that they require zero baking skills. You'll find the Mmmore Raspberry Power Cube in the November 'Feed Your Skin' Box. Enjoy!

Recipe: Raspberry Cheesecake Bite

Ingredients

1 Mmmore Raspberry Power Cube
1 tsp coconut oil
1/4 cup cashews
2 tbsp plant milk of choice
1 tsp maple syrup
2 tbsp frozen raspberries

Method

1. Use the bottom of a glass to press the Mmmore Raspberry Power Cube into a lined or lightly greased muffin tin. Press down until completely flat and even. Place in the freezer.
2. Put the cashews in a mug and pour over enough boiling water to just cover. Allow to sit for 5-10 minutes, until cool.
3. Place the cashews, water and all remaining ingredients except for the raspberries into a blender and blend until completely smooth.
4. Pour the cashew mixture over the Mmmore Raspberry Power Cube. Return to the freezer and allow to set for 4-12 hours, or overnight.
5. Microwave the raspberries in a bowl for 20 seconds so that they soften slightly. Mash with a fork.
6. Spoon the raspberry mixture over the set cashew mixture and return to the freezer for another 3-12 hours.
