Known for its exceptional anti-inflammatory and immune-boosting properties, turmeric has been used in Ayurvedic medicine for thousands of years.

Ingredients: Serves 2
½ cup basmati rice
1 cup water
1 bag MirMir Organics Turmeric Tea
½ tsp ground turmeric
½ tsp ground ginger
Salt and black pepper
200g tofu, sliced into squares
1 tsp coconut/olive oil
2 tbsp roasted peanuts
Fresh coriander leaves and lime juice, to serve
Method:
1. In a small saucepan combine the rice, water, tea bag, turmeric, ginger and a
pinch of salt.
2. Bring to a boil and simmer for 15 minutes or until the rice is cooked and water
is absorbed.
3. Season the tofu with a few grinds of salt and pepper.
4. Heat the oil in a small pan over a medium heat and add the seasoned tofu.
Sauté for 5 minutes, flipping to cook each side, until tofu has a slightly golden.
5. Transfer the rice to a serving plate with serve with the tofu, peanuts and fresh
coriander.
6. Squeeze over lime juice and enjoy.
