Turmeric-Infused Rice With Golden Tofu

Known for its exceptional anti-inflammatory and immune-boosting properties, turmeric has been used in Ayurvedic medicine for thousands of years. 

The active ingredient in turmeric is curcumin, which is also what gives the spice its characteristic yellow colour. A powerful antioxidant, curcumin is hailed for its role in improving heart health—is there anything it doesn't do!?

Ingredients: Serves 2

½ cup basmati rice

1 cup water

1 bag MirMir Organics Turmeric Tea

½ tsp ground turmeric

½ tsp ground ginger

Salt and black pepper

200g tofu, sliced into squares

1 tsp coconut/olive oil

2 tbsp roasted peanuts

Fresh coriander leaves and lime juice, to serve

Method:

1. In a small saucepan combine the rice, water, tea bag, turmeric, ginger and a
pinch of salt.
2. Bring to a boil and simmer for 15 minutes or until the rice is cooked and water
is absorbed.
3. Season the tofu with a few grinds of salt and pepper.
4. Heat the oil in a small pan over a medium heat and add the seasoned tofu.
Sauté for 5 minutes, flipping to cook each side, until tofu has a slightly golden.
5. Transfer the rice to a serving plate with serve with the tofu, peanuts and fresh
coriander.
6. Squeeze over lime juice and enjoy.
