No better way than spending an afternoon on the couch with a tea in one hand and a slice of cake in the other. This cake will hit just the spot. Using Nexba from the April Box!\n\nIngredients:\n1\/4 cup orange juice\n1\/4 cup orange nexba orange soda\n1\/2 cup (125g) coconut yoghurt\n2 tbsp orange zest (from 1 orange)\n2 tbsp melted coconut oil\n1 tsp vanilla extract\n1\/3 cup coconut sugar\n2 cups (250g) plain gluten-free flour\n2 tsp baking powder\n½ tsp baking soda\n \nToppings:\n2 tbsp melted coconut butter\n2 tbsp orange juice\n1 orange thinly sliced into rounds\n \nMethod:\n\n\nPreheat the oven to 160C (fan-forced) and line a loaf pan with baking paper.\n\n\nIn a large bowl, whisk together the orange juice + zest, nexba, yoghurt, oil, vanilla and sugar until creamy. \n\n\nSlowly mix in the flour, baking powder + soda. Stir well so there are no lumps.\n\n\nPour into the loaf pan and bake for 45-50 minutes (or until a toothpick comes out clean when you stick it in the centre).\n\n\nAllow to cool.\n\n\nMix together the coconut butter and orange juice to create a creamy frosting. Spoon onto the cake with the back of a spoon.
