No better way than spending an afternoon on the couch with a tea in one hand and a slice of cake in the other. This cake will hit just the spot.
Ingredients:
1/4 cup orange juice
1/4 cup orange nexba orange soda
1/2 cup (125g) coconut yoghurt
2 tbsp orange zest (from 1 orange)
2 tbsp melted coconut oil
1 tsp vanilla extract
1/3 cup coconut sugar
2 cups (250g) plain gluten-free flour
2 tsp baking powder
½ tsp baking soda
Toppings:
2 tbsp melted coconut butter
2 tbsp orange juice
1 orange thinly sliced into rounds
Method:
- Preheat the oven to 160C (fan-forced) and line a loaf pan with baking paper.
- In a large bowl, whisk together the orange juice + zest, nexba, yoghurt, oil, vanilla and sugar until creamy.
- Slowly mix in the flour, baking powder + soda. Stir well so there are no lumps.
- Pour into the loaf pan and bake for 45-50 minutes (or until a toothpick comes out clean when you stick it in the centre).
- Allow to cool.
- Mix together the coconut butter and orange juice to create a creamy frosting. Spoon onto the cake with the back of a spoon. Decorate with orange slices and serve.
