Our Food Safari…Japanese Inspired Recipes

Let our resident yogi and health nut Amy Hotz take you on a fantastic food safari around Japan. While the Japanese cuisine is often thought of as an epicentre for the world's most tasteful yet intricate food, here are 2 easy recipes that will make your tastebuds scream with excitment!

Creamy Rice Pudding

Ingredients:
  • ¾ cup Forbidden Foods Green Rice
  • 400ml Organic coconut milk
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • a pinch of nutmeg
  • 2 tablespoons Rice Malt Syrup/ sweetener of choice (optional)
  • strawberry/ coconut flakes/ walnuts to serve
Instructions:
  1. Rinse your Green rice in a bowl a few times with cold water
  2. Place the rice, coconut milk, water, vanilla, cinnamon and nutmeg into a pot and stir until well combined.
  3. Bring to the boil – stirring continuously to prevent clumping
  4. Simmer on a low to medium heat for 15 minutes uncovered
  5. Cover and simmer on a low heat for 10 minutes (stir every minute)
  6. Take the lid off and continue to simmer until rice is soft and creamy thick texture has formed
  7. Serve hot or cold with fresh fruit, coconut and nuts
  8. Enjoy!

Sushi Roll + Salad

Ingredients
  • 2 inari pockets (can be found at any Asian grocer, ask for additive free + organic)
  • 2 rolls of Nori
  • 2 cup of cooked Forbidden Foods Green Rice
  • 1 tablespoon of Rice Wine Vinegar
  • 1 tablespoon hot water
  • 1 teaspoon rice malt syrup/ agave
  • seasonal veggies
  • sesame seeds
  • spring onion
Instructions:
Sushi Rice:
  1. Cook Rice as directed per the packet
  2. In a separate bowl stir together rice wine vinegar, hot water and rice malt syrup
  3. Poor vinegar mix over warm rice and stir throughout
  4. Let it cool slightly
Baby sushi roll:
  1. Cut your sheet of nori in half
  2. Place ½ cup of green rice on the nori sheet, spreading evenly with leave a 1.5cm gap from each end of the nori sheet.
  3. Place your filling of choice in the middle, remember to keep it thin as it is a baby roll
  4. Roll your Nori sheet over to form a sushi roll
  5. Using a wet knife slice into smaller pieces
  6. Enjoy!
Inari:
  1. Chop up one spring onion
  2. Add to one cup of sushi rice
  3. Fill each pocket with the sushi rice and spring onion mix
  4. Top with sesame seeds
  5. Enjoy!

Enjoy both sushi creations with a delicious salad or chopped up veggies.
