These pumpkin muffins are sure to hit the spot. They are full of good ingredients like flaxseed, pecans, and refined sugar free chocolate! The muffins pair nicely with a big ole' cup of tea, coffee or slather on some coconut yoghurt.
Ingredients
1 cup pumpkin puree
1/3 cup maple syrup
1/4 cup melted coconut oil
1 ½ cups (150g) oat flour
1 ½ cups (150g) almond meal
¼ cup ground flaxseed meal
2 teaspoons baking powder
2 tsp baking powder
¼ cup pecans, chopped coarsely
1 packet Origin Chocolate, chopped
Method:
- Preheat your oven to 160C (fan forced) and line a muffin tray with 12 muffin liners.
- In a large bowl combine the pumpkin puree, maple syrup and coconut oil.
- Add the oat flour, almond meal, flaxseed, baking powder and baking soda and mix until well combined.
- Fold in the pecans and chopped chocolate.
- Spoon into muffin liners and bake for 20-25 minutes.
