Healthy Maple Pumpkin Oat Muffins

These pumpkin muffins are sure to hit the spot. They are full of good ingredients like flaxseed, pecans, and refined sugar free chocolate! The muffins pair nicely with a big ole' cup of tea, coffee or slather on some coconut yoghurt. 



  • 1 cup pumpkin puree

  • 1/3 cup maple syrup

  • 1/4 cup melted coconut oil

  • 1 ½ cups (150g) oat flour

  • 1 ½ cups (150g) almond meal

  • ¼ cup ground flaxseed meal

  • 2 teaspoons baking powder

  • 2 tsp baking powder

  • ¼ cup pecans, chopped coarsely

  • 1 packet Origin Chocolate, chopped



  1. Preheat your oven to 160C (fan forced) and line a muffin tray with 12 muffin liners.

  2. In a large bowl combine the pumpkin puree, maple syrup and coconut oil.

  3. Add the oat flour, almond meal, flaxseed, baking powder and baking soda and mix until well combined.

  4. Fold in the pecans and chopped chocolate.

  5. Spoon into muffin liners and bake for 20-25 minutes.
