Healthy Salted Caramel Brownie Recipe

We were super excited to experiment with coconut flour at GoodnessMe Box when some packs landed on our doorstep. Not only is it high in fiber, protein (100gms contains 38 percent of our RDI!) and healthy fats it is a great gluten free baking alternative. Our office dessert queen Kara whipped up this health salted caramel brownie recipe that we know you will love!

Ingredients:

Brownies:

  • ½ cup coconut flour
  • ¾ cup cacao powder
  • 1 teaspoon vanilla powder
  • Pinch sea salt
  • ½ cup rice malt syrup, melted
  • ½ cup coconut oil, melted
  • 5 eggs, lightly whisked

Caramel:

  • 8 dates, softened in hot water
  • 150ml (1/2 can) coconut cream
  • Pinch sea salt

Method | Makes 9 brownies

  1. Preheat oven to 160°C fan forced and line a 20x30cm slice tin with baking paper.
  2. To make the caramel, place dates, coconut milk & salt into a high powered blender and process until a smooth caramel forms.
  3. Combine the coconut flour, raw cacao powder, vanilla & salt in a bowl.
  4. Mix together the coconut oil, rice malt syrup, and eggs then add to dry ingredients. Stir well to combine until a nice batter forms.
  5. Pour the mixture into lined tin and smooth evenly with a spatula.
  6. Dollop the caramel sauce over the brownie mixture then using a skewer swirl the caramel through the brownies until evenly mixed.
  7. Bake in the oven for 18-20 mins minutes or until a skewer comes out relatively clean. You may want to adjust your cooking time depending on your oven or how soft you like your brownies.
  8. Cool in the tin then cut into squares
