Mirinda is the owner of OM Collective and feels so lucky to be pursuing her dream of creating a studio that offers yoga to everybody! Coming from a nutrition and personal training background Mirinda has always been interested in health and wellness and felt that yoga was the missing link that truly brings everything – the mind, body, emotions – together as one.
So let's take a peek at Mirinda's day on a plate...
Every day is a little bit different but this is a pretty average day of some of my go-to meals, snacks & treats! I don’t follow any diet styles and instead practice intuitive eating, just listening to my body and keeping things simple.
Breakfast
The first thing I do when I wake up is I scrape my tongue, brush my teeth and drink a big old cup of warm water, half a lemon, raw honey (sometimes ginger) & drink it with a straw to protect my teeth! Usually, I head to the gym for a workout either reformer pilates or the resistance class at F45. Now it’s food time….(if I do wake up hungry, though I listen to my body and eat first but usually I’m good for a few hours!)
Banana Pancakes - healthy, protein full, naturally sweet & delicious!
Ingredients
- 1 x mashed banana
- 2x eggs
- Loads of cinnamon
- Desiccated Coconut (optional)
Method
- Mix all together well
- Heat saucepan with coconut oil and cook like a regular pancake!
- Top with defrosted blueberries/raspberries (pop them in the pan for a few seconds!) & a drizzle of Tahini = perfection!
Snack
I am a massive sweet tooth so after every meal and in between I am drinking herbal teas, I especially love all the Pukkha combos :) Otherwise, it’s Cob’s popcorn or a banana/apple & handful of almonds
Lunch
Usually some kind of roast veggies - pumpkin, sweet potato, cauliflower mixed in with leafy greens, some kind of protein source sometimes halloumi or admittedly a can of tuna (with oil... pour out the excessive and what’s left will give salad a nice light dressing) and half an avocado if I’m lucky... and yes I have spent $5 on an avo before haha!
Snack
Obviously herbal tea and 2 pieces of dark chocolate - currently obsessed with Alter Eco’s Mint choc...I usually have 2-3 blocks of good quality chocolate on rotation in the house...there is food for fuel and there is food for the soul ;)
Dinner
Super simple grilled chicken with a side of cabbage salad (just massage chopped cabbage with some lemon juice & salt then add some mayonnaise mix together it’s so good!), chopped tomato & cucumber with olive oil and some roast sweet potato.
Dessert
No surprises here... herbal tea and some more dark chocolate! But on special occasions a.k.a the weekend, I will treat myself with real milk chocolate usually from Source Bulkfoods... the chocolate covered almonds are heavenly or sometimes I even create my own choc covered strawberries!
