This single serve vegan cheesecake is just what you need tonight. It only needs 5 ingredients and is perfect for you coconut choc lovers. The base is full of protein from PranaOn's Vegan Protein Ball so it's even gluten free!!
Ingredients:
1/3 cup raw cashews
1 tbsp coconut yoghurt
1 PranaOn Cacao Hemp Vegan Protein Ball
2 tsp cacao powder
1 tsp maple syrup
Method:
- Cover cashews with boiling water in a bowl and allow to soak for 2 hours.
- Rinse the cashews well and add to a blender with the coconut yoghurt. Blend until very smooth.
- Using the base of a glass, firmly press the PranaOn Cacao Hemp Vegan Protein Ball into a silicone muffin tray until completely flat.
- Spoon almost all of the cashew coconut mixture onto the protein ball base.
- Add the cacao powder and maple syrup to the remaining mixture and stir well. Spoon on top of the cheesecake cup and carefully swirl with a teaspoon.
- Place into the freezer and allow to freeze overnight.
- Serve and enjoy!
