When you get asked to bring dessert to the BBQ this is what you bring! A delicious sweet and tart filling with a perfectly crumbly base.
Ingredients- Serves 12
Tart crust
- 4 cups almond meal
- 3 tbsps maple syrup
- 2 tbsps melted coconut oil
- 3 tbsps cold water
Lemon filling
- 2 ½ cups canned coconut cream
- ½ cup maple syrup
- ½ cup Lemon Fresh lemon juice
- ¾ cup arrowroot flour
- ¼ cup coconut oil or coconut butter
- ¼ tsp turmeric
- 1/4 tsp salt
Method:
- To make the crust, combine everything together in a large bowl using your hands to form a dough.
- Press the dough into a 25 cm loose-bottom tart pan. Use your fingers to evenly spread around the grooves.
- Place into the freezer to firm up while making the filling.
- Add all of the lemon filling ingredients to a medium saucepan. Bring to a medium to high heat for 5-10 minutes while whisking constantly. The mixture should thicken quickly and coat the back of a spatula.
- Quickly pour the mixture into the tart shell and smooth the top if necessary. Allow the tart to set in the fridge overnight.
- When the tart is firm to the touch, decorate as desired. Serve immediately.
Note: freeze for 1 hour before slicing for a firmer texture
