Ingredients:
2 small carrots, grated
2 small zucchinis, grated
1 spring onion, finely chopped
1/2 cup almond milk
3/4 cup GF flour (I used buckwheat flour)
2 tbsp flax meal
1 packet Spag Bol Mingle seasoning
2 tbsp olive oil
Method:
1. Whisk the flax meal with 5 tbsp warm water to form a flax egg. Set aside.
2. Combine the carrots, zucchini, spring onion, almond milk, GF flour and Mingle seasoning in a bowl. Add the flax egg and stir to form a batter.
3. Heat 1/4 of the oil in a large frying pan. Use a tablespoon to measure out evenly sized fritters and fry the fritters for 3-4 minuets on each side. This should take roughly four batches; add more oil to the pan between batches.
4. Serve with your favourite dipping sauce and enjoy!
