Vegan Lemon Tart

When you get asked to bring dessert to the BBQ this is what you bring! A delicious sweet and tart filling with a perfectly crumbly base.

Ingredients- Serves 12

Tart crust

  • 4 cups almond meal
  • 3 tbsps maple syrup
  • 3 tbsps cold water

Lemon filling


  1. To make the crust, combine everything together in a large bowl using your hands to form a dough.
  2. Press the dough into a 25 cm loose-bottom tart pan. Use your fingers to evenly spread around the grooves.
  3. Place into the freezer to firm up while making the filling.
  4. Add all of the lemon filling ingredients to a medium saucepan. Bring to a medium to high heat for 5-10 minutes while whisking constantly. The mixture should thicken quickly and coat the back of a spatula.
  5. Quickly pour the mixture into the tart shell and smooth the top if necessary. Allow the tart to set in the fridge overnight.
  6. When the tart is firm to the touch, decorate as desired. Serve immediately.

Note: freeze for 1 hour before slicing for a firmer texture
