A healthy platter & a delicious beetroot hummus perfect for a Christmas party and to share with friends and family. Platters are a great option at Christmas time because there will always be something for everyone no matter their dietary requirements!
Ingredients
- 1 can chickpeas
- 2 cooked beetroots
- 2 tbs tahini
- ½ lemon, juiced
- 2 cloves of garlic
- Generous pinch sea salt
- 2-3 tbsp water, to thin
Cheese platter ingredients
- Rockmelon
- Blueberries
- Kalamata olives
- Capsicum
- Coriander
- Walnuts
- Baby cukes
- Preferred cheese
- Green beans
- Mary’s Gone Crackers
- Beetroot hummus, to serve
Method
1. Combine eggplant chickpeas, beetroot, tahini, lemon juice, garlic, salt, pepper and water in a food processor or blender and process until smooth and creamy.
2. Place on a large platter and enjoy.
