Collagen Double Chocolate Brownies

Decadent plant-based double chocolate brownies, fabulously rich, with chewy edges, crinkly tops and a soft, fudgy centre.

Ingredients- Serves 16

1 cup/ 250g peanut butter
2 large eggs
1/2 cup maple syrup
1 tsp vanilla extract
1/2 cup raw cacao powder
1 sachet Collagen Co mixed berry collagen
2 tsp baking powder
1/4 teaspoon salt
1/2 cup chocolate chips

Method:

  1. Preheat the oven to 160C and line a 20cm square pan with baking paper.
  2. In a large bowl whisk the peanut butter, eggs, maple syrup and vanilla until smooth.
  3. Add the cacao powder, collagen, baking powder and salt. Mix well to combine.
  4. Fold in 1/3 cup chocolate chips.
  5. Pour batter into the baking pan. Sprinkle the remaining chocolate chips on top and bake for 30 minutes.
  6. Allow to cool completely then slice into squares.
