Decadent plant-based double chocolate brownies, fabulously rich, with chewy edges, crinkly tops and a soft, fudgy centre.
Ingredients- Serves 16
1 cup/ 250g peanut butter
2 large eggs
1/2 cup maple syrup
1 tsp vanilla extract
1/2 cup raw cacao powder
1 sachet Collagen Co mixed berry collagen
2 tsp baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
Method:
- Preheat the oven to 160C and line a 20cm square pan with baking paper.
- In a large bowl whisk the peanut butter, eggs, maple syrup and vanilla until smooth.
- Add the cacao powder, collagen, baking powder and salt. Mix well to combine.
- Fold in 1/3 cup chocolate chips.
- Pour batter into the baking pan. Sprinkle the remaining chocolate chips on top and bake for 30 minutes.
- Allow to cool completely then slice into squares.
