So where did Melissa's love affair with nut butter and porridge all begin? After losing 10.5 kg which she had gained in her final two years of high school, Melissa had become so passionate about nutrition that she decided to study it on top of her BA. With a special interest in weight loss and digestive health for well-being, here is a window into her day on a plate which may tickle your fancy…
Breakfast:
Two slices of Ancient Grains wholegrain spelt toast with 1/3 of an avocado and, for protein, two free range scrambled eggs. Hits the spot.
Mid-morning:
I make a mocha style coffee with coconut rive milk and Loving Earth Drinking Chocolate. Love this stuff. It’s made with cacao, cacao nibs, coconut sugar and sea salt.
For lunch
I’m meeting a friend at the trendy raw food café Earth to Table in Bondi Junction. I choose the rainbow seaweed slaw which is also full of kelp, noodles, beetroot, broccoli and hemp seeds. The ginger and miso dressing it the cherry on top. Great for digestive health too. Not your everyday salad. I also order my favourite ‘Give me a high’ iced coffee. It’s made with cold drip coffee, homemade almond milk, cacao and a touch of coconut sugar.
Dinner
is a warm salad made with leftover roast zucchini, beetroot, parsnip and capsicum. I top it with some goat’s curd and walnuts a plant based source of the anti-inflammatory essential fatty acid omega 3. On the side I have a musubi from Iku Wholefoods. This is a Japanese delicacy made with brown rice and seeds wrapped in nori seaweed and filled with a plum puree called ‘umeboshi’ – Very umami and satisfying!
Peppermint tea is my after dinner digestive, marking the end on the meal.
