Ingredients
- 1 cup dried apricots, diced (soft & juicy works best)
- ½ cup raw cashews
- ½ cup almond meal
- ¾ cup desiccated coconut
- 1 tbsp SaweetWay Allulose Syrup
- ¼ cup chia seeds
- Zest and juice of 1 medium lemon
- ¼ cup water
- Extra shredded coconut, for topping
Method
- Blend the cashews
Add raw cashews to a blender or food processor and pulse until finely ground. - Add the base ingredients
Add almond meal, desiccated coconut, chia seeds, lemon zest and juice, and water. Blend until combined. - Add apricots
Add the chopped apricots (ensure they’re finely diced for best texture) and blend again until the mixture comes together. It should be thick and slightly sticky. - Press & top
Press the mixture firmly into a lined baking tin and sprinkle with shredded coconut on top. - Set
Place in the freezer until firm. - Slice & store
Cut into bite-sized pieces and store in the fridge.
