This Strawberry mug cake recipe is great on those nights when you want something sweet with minimal dishes and baking time. It's egg free and can be made for one or two (if you like to share). It is one of the easiest dessert recipes and because it's full of nutritious ingredients it's suitable for breakfast. With no gluten, dairy, grains or sugar, this is the perfect easy recipe when you want a quick treat!
Ingredients:
¼ cup almond meal
1 tbsp ground flaxseed
¼ cup mashed ripe banana
2 tbsp almond milk
½ tsp vanilla extract
½ tsp baking powder
1 tsp Lakanto Monkfruit Sweetener
2 strawberries, roughly diced
Coconut oil, to grease
Method:
- Lightly grease a mini microwave safe dish with coconut oil
- Combine all ingredients in a small bowl
- Pour into greased dish and microwave for 4 minutes.
- Loosen edges with a knife and flip onto a plate.
- Top with coconut yoghurt and fresh fruit. Enjoy!
