Our gut microbiome is made up of trillions of microbes, including bacteria and fungi. It is involved in digestion, immunity and even manufacturing certain nutrients and neurotransmitters. Gelatin
Gelatin naturally absorbs liquids, which is why it thickens and becomes a jelly-like texture.
