Ingredients: Serves 2-3
1 packet Tilda brown basmati rice
2 x 170ml coconut milk (1/4 cup reserved)
1/2 cup tropical fruit juice reserved*
2 tbsp maple syrup
2 tsp vanilla extract
1 can tropical fruits*
Paleo muesli
Method:
- In a medium saucepan add the rice, coconut milk, tropical fruit juice, maple syrup and vanilla. Bring to a gentle boil, and stir until combined.
- Simmer for 15 minutes until thickened, stirring occasionally.
- Divide into bowls and drizzle over remaining 1/4 cup coconut milk. Top with the tropical fruits and 3 tbsp muesli per bowl and enjoy.
