Feeling in need of a warming soup for dinner? Then we highly recommend this recipe. Packed with nourishing ingredients and finished off with a delicious crunch from Pimp My Salad's cashew parmesan or homemade crispy kale chips.
Ingredients:
- 2 tbs extra virgin olive oil
- 1 medium onion, chopped
- 1 tbs Mingle tomato sauce
- 2 cloves garlic, minced
- 1 15-oz. can chopped tomatoes
- 1 tbs vegetable powder, we recommend San Elk
- 2 tsp balsamic vinegar
- 1/2 tsp thyme, fresh or dried
- 4 cups water
- Pinch of salt
- Top with Pimp My Salad's cashew parmesan or homemade crispy kale chips
Preparation
- Pre-heat at 150 degrees C. Line tray with GoodnessMe baking mat.
- Heat oil in medium saucepan over medium heat. Add onion, and sauté 5 minutes, or until soft and translucent. Stir in tomato paste, garlic and cook 1 minute, or until tomato paste darkens. Stir in diced tomatoes, vegetable stock, balsamic vinegar, thyme, and 4 cups water. Cover pan, bring soup to a boil, then reduce heat to medium-low, and simmer, covered, 15 minutes.
- Slice kale from stem and rub in extra virgin olive oil with hands. Bake in oven for 20 minutes until golden. Sprinkle with salt.
- Remove from heat, and blend soup with immersion blender or in blender or food processor until smooth. Season with salt and pepper, if desired. Top with Pimp My Salad's cashew parmesan or homemade crispy kale chips. Enjoy!
