3 Fun Topping Ideas for Black Rice Pudding

In a food rut?

Say no more! We recently came across a new wholefood brekkie option that also works a treat as a snack or dessert:

Forbidden Brekky Rice! This Black Rice & Coconut Organic Instant Rice Pudding (phew!) is gluten free, dairy free and low in sugar - but far from flavour free!

The best part though? It takes just 45 seconds to ‘make’: simply pop in the microwave and in less than a minute, your fancy-looking rice pudding is ready!

We can’t get enough of this one, so we thought we’d share some simple topping recipes that can transform this wholegrain rice pud into something a bit special.

Papaya Boat with Black Rice

This tropical, Asian-dessert-inspired recipe can be enjoyed anytime of day.

Serves: 2 | Prep Time: <10 mins | Cook Time: 5 mins

Ingredients:

  • ½ a red papaya, cut in half lengthways with the seeds scooped out
  • 1 x Forbidden Brekky Black Rice & Coconut Organic Instant Rice Pudding
  • 1 small-medium banana, sliced into thick rounds
  • ½ a lime, cut into two wedges
  • Greek or coconut yoghurt, to serve
  • A few fresh mint leaves, to use as a garnish

Method:

  1. Heat the Forbidden Brekky Rice as per instructions on the pack.
  2. Fill the papaya (where the seeds were) with the warmed Brekky Rice, followed by the banana slices.
  3. Serve with lime wedges, yoghurt and mint…lovely!

Berry Good Black Rice

This simple but impressive-looking dessert can also be served for breakfast. We like it because it always look super colourful, and you can easily chop and change the fruit you use each time…you’ll never get bored of this one!

Strawberries (or raspberries) work especially well here - their slight tartness cuts the richness of the creamy coconut, providing the perfect flavour balance.

Serves: 1-2 | Prep Time: <10 mins | Cook Time: 45 seconds

Ingredients:

  • 1 x Forbidden Brekky Black Rice & Coconut Organic Instant Rice Pudding
  • ½ a cup strawberries
  • 1 small-medium banana
  • 1 tablespoon almond butter
  • Handful of dry-roasted cashews, roughly chopped

Method:

  1. Heat the Forbidden Brekky Rice as per instructions on the pack.
  2. Once warmed, place the rice into a ¾ Cup measuring cup, making sure it’s tightly packed.
  3. Place cup with the rice upside down on a serving board or plate, tapping the top so that the rice comes out nice and neatly.
  4. Decorate with strawberries, banana, cashews, and of course almond butter for dipping!

Brekky Rice Porridge with Mango & Passionfruit

Serves: 1 | Prep Time: 5 mins | Cook Time: 45 seconds

Ingredients:

  • 1 x Forbidden Brekky Black Rice & Coconut Organic Instant Rice Pudding
  • 1/2 a mango, diced
  • 1 passion fruit
  • 2 tablespoons of shaved dark chocolate (we used 70% dark chocolate)
  • 1/2 a cup of coconut milk

Method:

  1. Heat the Forbidden Brekky Rice as per instructions on the pack. One heated place Brekky rice into a shallow bowl.
    Pour the coconut milk (cold or warmed up if you’d prefer) around the edge of the bowl so it surrounds the brekky rice.
  2. Scoop out the passion fruit pulp and seeds and assemble on top of the rice, along with the diced mango.
  3. Sprinkle the dark chocolate over the top and brekkie is served!
