This Homemade Seedy Cider Bread is seriously too easy to make. It's gluten-free, dairy-free, grain-free and refined sugar-free. While the nuts and seeds provide healthy fats, protein, and fibre. This wholesome nutty bread is freezable, low carb and is great for sandwiches. Use it with both sweet and savoury toppings or pairing it with soup, avocado, the options are endless!
Ingredients
- 4 eggs
- 3/4 cup Cocobella Coconut cider
- 2 cups ground flaxseed
- 3/4 cup almond meal
- 1/4 cup sesame seeds
- 1/4 cup chia Seeds
- 2 tbsp sesame seeds for topping
- 2 tsp baking powder
Method
- Preheat the oven to 180°C (356°F) and line a small loaf tin with baking paper.
- Whisk together the eggs and coconut cider in a small bowl and set aside.
- Mix together the flaxseed meal, almond flour, sesame seeds, chia seeds, and baking powder then pour in the wet ingredients until smooth and well combined.
- Pour into a loaf pan then sprinkle with sesame seeds.
- Bake in the oven for 35-40 minutes or until ready (stick a toothpick in!)
