Healthy Mint Collagen Rocky Road

Tis the season for rocky road, but this one has a big twist. It contains a minty marshmallow-like collagen bar! With cherries, coconut and buckinis; you may just prefer this to the original.

Ingredients:

1 ATP Science Noway Mallow Bar⁠

1 1/2 blocks of dairy free dark chocolate (I used Lindt 70% - it's vegan!)⁠

1/3 cup glacé cherries (can substitute this for dried blueberries or goji berries)⁠

1/4 cup buckinis (activated buckwheat)⁠

1/4 cup shredded coconut, plus extra to top⁠

1-2 drops peppermint essence (optional)⁠


Method⁠:

  1. Cut the Mallow Bar into marshmallow-sized chunks.⁠
  2. Break up the chocolate, place in a bowl and microwave for 3-4 20 second intervals, stirring after each time, until melted.⁠
  3. Once melted, add the peppermint essence to the chocolate if using and stir well.⁠
  4. Combine all remaining ingredients in a bowl.⁠
  5. Pour over the chocolate and mix until everything is completely coated.⁠
  6. Place into a container or tray (a lunchbox works well!) lined with baking paper and place in the fridge for 30-40 minutes to set.⁠
  7. Once set, cut into even slices and enjoy.
