Tis the season for rocky road, but this one has a big twist. It contains a minty marshmallow-like collagen bar! With cherries, coconut and buckinis; you may just prefer this to the original.
Ingredients:
1 ATP Science Noway Mallow Bar
1 1/2 blocks of dairy free dark chocolate (I used Lindt 70% - it's vegan!)
1/3 cup glacé cherries (can substitute this for dried blueberries or goji berries)
1/4 cup buckinis (activated buckwheat)
1/4 cup shredded coconut, plus extra to top
1-2 drops peppermint essence (optional)
Method:
- Cut the Mallow Bar into marshmallow-sized chunks.
- Break up the chocolate, place in a bowl and microwave for 3-4 20 second intervals, stirring after each time, until melted.
- Once melted, add the peppermint essence to the chocolate if using and stir well.
- Combine all remaining ingredients in a bowl.
- Pour over the chocolate and mix until everything is completely coated.
- Place into a container or tray (a lunchbox works well!) lined with baking paper and place in the fridge for 30-40 minutes to set.
- Once set, cut into even slices and enjoy.
