6am

I kickstart my day with a big glass of water & then head our the door for an early morning workout! Today was a run along the beach but it can vary from sprints at the track with my husband to some yoga or HIIT (I'm working my way through Kayla Itsines atm). I love training in the morning because it wakes me up & energises me for the day!

7:30am

back home, I quickly blend up a fruit smoothie for breakfast before I rush out the door to see my clients for dietitian appointments. My favourite is tropical mango smoothie made with mango, passionfruit, unsweetened soy milk, chia seeds & topped with shredded coconut! I also love a home made coffee.

10-11am

Snack time between appointment. I always pack my snacks (which I prepare in advance on the weekend) & today's morning tea was homemade bliss balls (made with dates, walnuts, shredded coconut & vanilla - see recipe below).

1:30pm

My lunch today is a huge rainbow salad with a beans. If I'm not enjoying s delicious salad, I also love a fruit salad with coconut yoghurt for lunch.

3-4pm

Snack time again! I always need an afternoon tea as I often have late night appointments with clients. I'm having veggie sticks and Syndian Natural Food's pumpkin dip (it's soooooo good!) plus some fresh blueberries.

7pm

Dinner - My husband and I love vegetable-filled dinners! They leave us feeling healthy & satisfied but not overly full. I choose to get my protein from beans, lentils, tofu or fish. Tonight we're having a big plate of baked veggies (my favourite is pumpkin) topped with mixed herbs, garlic, balsamic and a drizzle of honey & a slice of baked salmon.

8pm

I love going for a walk with my husband after dinner. It helps manage any mindless/non-hungry eating & I get to catch up on things with my husband.

9pm

Sweet treat time - I love something small and sweet before bed. Tonight I'm having some home-made banana nice-cream (blended up frozen banana).

10pm

Bed time - I'm reading through an online devotion from Charles Swindoll which helps me feel happy & relax.

  • 1 cup deseeded medjool dates, chopped
  • 1/2 cup desiccated coconut
  • 1tbs coconut oil
  • 2 teaspoon vanilla extract

Place ingredients into your blender or food processor. Blend until combined. Roll into balls. Enjoy!
