Stuck on healthy dinner ideas? After a long day at work, thinking of what to cook for dinner can be a real drag, which is why we absolutely love this salmon and roasted veggie combo that's baked all on the same pan!
Ingredients: Serves 4
4 salmon fillets
1/4 head cauliflower, cut into florets
1 small head broccoli, cut into florets
1 red capsicum, cut into cubes
2 red potatoes, cut into quarters
1/4 Japanese pumpkin, cut into cubes
2 tbsp Table of Plenty Veggie Roasters
Olive oil spray
Method:
1. Preheat the oven to 200°C and line a large tray with baking paper.
2. On the baking sheet, toss together the vegetables with 2 tbsp of Table of Plenty Veggie Roasters seasoning and spray with olive oil. Spread out in an even layer and roast for 15 minutes until they're just starting to soften and brown.
3. Rub the salmon in 1 tablespoon seasoning and spray with olive oil. Place on top of the vegetables.
4. Return to the oven and continue baking until the potatoes are golden and fork-tender and the salmon is opaque throughout (about 10 minutes).
