Pistachio & Cranberry Rocky Road

Ingredients: Serves 12-16

300g vegan dark chocolate, finely chopped

1/3 cup coconut flakes

1/4 cup Nibblish Gently Baked Cranberry

120g Munchme Pistachio Cranberry snack

1/4 cup pistachio nuts

1/2 cup Brazil nuts, halved

Method:

  1. Line a loaf pan with baking paper, allowing the 2 long sides to overhang. Alternatively, use a silicone loaf pan.
  2. Place the chocolate in a bowl and melt in the microwave on low. Heat in 30 second increments, stirring between until completely melted.
  3. Add the rest of the ingredients, mix well, and pour into the prepared pan.
  4. Refrigerate for 30 minutes to set.
  5. Slice and serve!
