What are konjac noodles?

Also known as shirataki noodles, konjac noodles are clear, gelatinous (or jelly-like) noodles that come from the root of the konjac plant, a root vegetable that’s native to eastern Asia. They’re mostly made up of glucomannan, a type of soluble fibre that gives the noodles their chewy texture - similar to a perfectly al dente pasta!

Konjac noodles were invented in Japan, but they’ve become more and more popular around the world as a high-fibre, gluten-free and paleo-and-keto-friendly noodle option. They have a mild taste, which makes them a great pantry staple as they absorb all the flavours of the ingredients they’re cooked with. So, if you’re whipping up a pesto using konjac noodles, they’ll dial up that delish herby flavour!

Fun fact: The konjac plant goes by a bunch of names, like snake plant, voodoo lily and elephant yam, because it kind of looks like an elephant’s foot!
