Who doesn't love a good rocky road? It's chunky, it's chocolate-y and it has so many little flavour surprises when you bite into it!
Ingredients
100g good quality dark chocolate, finely chopped
2 tbsp almonds
2 tbsp pistachio nuts
¼ cup coconut flakes
3 choc coated berries
¼ cup brown rice puffs
Method:
1. Grease the base and sides of a mini square or rectangle pan. Line with baking
paper, allowing the 2 long sides to overhang.
2. Place the chocolate in a bowl and melt in the microwave on low.
3. Add the rest of the ingredients, mix well, and pour into the prepared pan.
4. Refrigerate for 30 minutes to set.
5. Slice and enjoy.
