Who doesn’t love a Mexican feast? But let’s be real: a lot of the tortillas and chips out there aren’t doing a whole lot for us, nutrition-wise. If you’ve ever felt heavy after cooking up some tacos, chances are it wasn’t the filling… It was the tortilla.

The old-school tradition behind the taste
Most of the tortillas and corn chips you see on supermarket shelves are made with dried maize, which takes away the nutritional value of the corn. Others are made with processed flour and water for a quick-fix type of tortilla. Not La Tortilleria’s! The Melbourne-based brand is bringing authenticity back in a big way with a process called “nixtamalization.”
Started in small Mexican villages by the Aztecs over 3,000 years ago (yep, really!), this method holds on to all the nutrition and flavour of the corn - and it’s an art! It’s been passed down over time, and La Tortilleria has a 4th-generation nixtamal tortilla maker leading their team, creating their goodies from scratch.
So, what is nixtamalization, exactly? In a nutshell, it takes the whole corn kernels and soaks them overnight. This softens the corn so it’s ready to be ground into dough, and releases the B vitamins, calcium and amino acids locked inside the corn kernels for max nutritional value. The next day, the corn is drained, rinsed and milled into a flexible dough, or “masa” - and La Tortillera uses legit volcanic mill stones from Mexico to do this! Fresh masa has a pretty short shelf life, so that dough is pressed into tortillas straight away and baked in a Mexican tortilla oven.
Whew! No shortcuts. The result? A healthy, pliable tortilla that’s naturally gluten-free and bursting with flavour and nutrition, without any preservatives, additives, trans fats or GMOs. It’s authentic and truly a work of art, and it’s a world away (literally) from the flour-and-just-add-water tortillas that you’ll find at the supermarket.
