Not sure what to do with the Tofu you found in your December GoodnessMe Box? Why not try out this Tofu Pudding recipe!
Ingredients:
- 1/4 Tofu
- 4 Fresh Strawberries
- 200ml Apple Juice
- 2tbsp Agave nectar
- 1tbsp Agar Flakes
Strawberry Sauce
- 7 Strawberries finely chopped
- 2tbsp Agave nectar
- 1tbsp lemon juice
Method:
- In a small sauce pan, add apple juice and Agar flakes and let stand for 10-15 minutes.
- Heat it and bring to boil, then reduce the heat to low and cook stirring it until the Agar flakes are dissolved.
- In a medium bowl, add BONSOY TOFU, fresh Strawberries and Agave Nectar and blend.
- Add the apple juice mixture to the TOFU mixture and blend well with stick blender on high speed. (Blender can be used).
- Pour in ramekins and cool (the apple juice mixture is set in room temperature, but cool it to keep the strawberry colour).
- Make strawberry sauce. In a small bowl, mix with the chopped strawberries, Agave nectar and lemon juice.
- Pour the sauce over the pudding.
