There is nothing like a hearty bowl of hot gnocchi, and what better way to up your veggie intake (or sneak in extra veggies for the kids) than filling this dish with some added colour and flavour galore!
Ingredients:
- 250g gnocchi
- 1 tbsp olive oil
- 250g white mushrooms, thinly sliced
- 45g Ollies Flavoured Olives
- 200g cherry tomatoes
- 2 tbsp balsamic vinegar
- 1 tsp sea salt
- 1 tsp black pepper
- 2 cups arugula
- 2 tbsp cup rosemary leaves
Method:
- Fill a medium saucepan with salted water and bring to a boil
- Add gnocchi to the boiling water and cook for 3 to 4 minutes or until gnocchi float to
the top - Drain the gnocchi and set aside
- Heat oil in a large frying pan over medium heat and add the gnocchi, cook for 2
minutes - Add mushrooms and cook for 3 minutes
- Add Ollies Flavoured Olives, cherry tomatoes and balsamic vinegar cook for 2
minutes - Add salt, pepper and arugula and cook for 1 minute
- Serve and top with fresh rosemary
