Asian-style Turkey Mince

Do you ever hit that midweek slump and don't know what to cook? This recipe by The Fit Foodie is the answer. Did you know turkey ⁠is loaded with health benefits? Tryptothan found in turkey is mood-enhancing (produces serotonin), immune strengthening and can help for a better night's rest!⁠

Ingredients: Portions: 4

2 tablespoons peanut oil

500 lean turkey mince

2 garlic cloves, crushed, or 1 teaspoon garlic powder

1 red chilli, thinly sliced, or 1 tablespoon dried chilli flakes

3 tablespoons soy sauce or tamari

Zest and juice of 1 lime

1/2 tablespoon granulated stevia or 1 tablespoon honey

Fresh coriander, sliced red chilli and lime wedges, to serve (optional)

Method:

  1. Heat the peanut oil in a frying pan over medium-high heat.
  2. Add the turkey mince, garlic and chilli, cooking for 4–5 minutes, stirring regularly, until cooked through.
  3. Add the soy, lime and stevia or honey in the final minute of cooking. Stir well to coat the meat, then remove from the heat.
  4. Scatter with coriander and fresh chilli. Serve with lime wedges, if you like.
  5. Allow cooked mince to cool before storing in an airtight container in the fridge for 3–4 days, or for 2 months in the freezer.
