Breakfast Granola Cups

Ingredients: Makes 7-8 cups
​​1 1/2 cups rolled oats or quinoa flakes
1 serve Blue Frog Keto granola
1 large banana, mashed (about 1/2 cup)
2 tbsp chia seeds
1/4 cup maple syrup or honey
1 tsp cinnamon

To serve:
Greek or coconut yoghurt
Fresh fruit
Chia seeds

1. Combine everything together in a large bowl. Rest the mixture for 5-10 minutes to thicken up.
2. Preheat the oven to 180°C/ 160°C fan forced.
3. Divide the mixture into 6-8 greased muffin cups, press well, and form a cup shape.
4. Bake the cups for 30 minutes.
5. Allow to cool 10 minutes, then, carefully, remove the cups from the pan and let cool completely.
6. Fill each cup with 2 tbsp yoghurt, your favourite fruit and sprinkle with chia seeds.
