Coconut Pumpkin Dip with Beetroot Chips
Hosting a dinner party and don't have much time? Whip up this quick an easy pumpkin dip, sure to be a hit.
Ingredients
- 2 cups of pumpkin, diced
- 60g coconut pieces - I used Absolute Organic Organic Dried Coconut from my Goodness Me Box
- Beetroot Chips to serve
Method
Steam pumpkin until cooked through.

Place in bowl with coconut pieces & allow to cool.

Blend in high speed blender & blend until creamy consistency
4.
Serve with beetroot chips
