Hosting a dinner party and don't have much time? Whip up this quick an easy pumpkin dip, sure to be a hit.
Ingredients
- 2 cups of pumpkin, diced
- 60g coconut pieces
- Beetroot chips to serve
Method
- Steam pumpkin until cooked through.
- Place in bowl with coconut pieces & allow to cool.
- Blend in high speed blender & blend until creamy consistency.
- Serve with beetroot chips.
