Creamy Probiotic Quinoa Kale Salad

This salad recipe is made with a creamy probiotic dressing that is sure to be your new favourite! The salad contains all your essentials for a balanced meal; wholegrain carbohydrates (quinoa), healthy fats (avocado), and plant protein (walnuts). Plus the blueberries add antioxidants and extra flavour!

Ingredients

4 cups cooked quinoa

1 cup fresh blueberries

1 cup chopped Lebanese cucumber

2 cups kale leaves sliced

¼ red onion, thinly sliced

½ cup raw walnuts, chopped

½ cup chopped fresh basil

1 medium avocado, pitted and diced


Probiotic Dressing

¼ cup BellyUp Collagen With Superfood Berries

Juice of 1 lemon

1 tbsp olive oil

1 tbsp pure maple syrup

2 tbsp tahini

½ tsp sea salt


Method:

  1. To make the dressing combine all of the ingredients into a blender. Blend on high until smooth and creamy. Set aside
  2. In a large bowl combine the salad ingredients together and toss to combine.
  3. Massage the dressing into the salad and serve. Alternatively, serve the salad with the dressing on the side.
