Granola bar fans this is for you! There are so many try-to-be-healthy-but-not granola bars in the supermarket so if you can, make your own. This recipe is full of flavours, chewy and contains protein to help keep you full. Meal prep on Sunday with these and you'll have them for the whole week!
Ingredients: Makes 20 bars
½ cup buckinis
1 cup rolled GF oats
½ cup chopped almonds
½ cup goji berries
½ cup desiccated coconut
¼ cup chopped dark chocolate
1 x sachet Inca Organics Protein Powder
1 serve of protein powder (30g)
2 eggs
2 tsp vanilla
¼ cup melted coconut oil
½ cup maple syrup or honey
Method:
- Preheat oven to 180°C
- In a large bowl combine all of the dry ingredients.
- Add the eggs, vanilla, oil and maple syrup. Mix well to combine.
- Spoon into a rectangle baking tin lined with baking paper- smooth out the top
- Bake for 35 minutes or until cooked through.
- Cool before slicing.
