Peanut Butter Granola Blondies

Afternoon tea taken to the next level with this sweet treat!

Ingredients: Serves 12

1 cup peanut butter
1/2 cup coconut sugar
1/2 cup mashed banana
1/4 cup melted coconut oil
2 tsp vanilla extract
1/4 cup gluten-free flour
2 tsp baking powder
1/4 tsp salt
1/2 cup Mindful Foods Cacao Brain Powder granola* + 2 tbsp extra for topping
1/4 cup chocolate chips + 2 tbsp extra for topping

Method

  1. Heat oven to 160C (fan-forced) and line an 8" square pan with baking paper.
  2. In a large bowl, mix together peanut butter, mashed bananas, coconut sugar, melted coconut oil and vanilla. Add flour, baking powder, and salt then mix together until blended.
  3. Stir in 1/2 cup granola and 1/4 cup chocolate chips and spread evenly in the pan. Sprinkle with 2 tbsp extra granola and 2 tbsp chocolate chips.
  4. Bake for 30-35 minutes or until set.

*Note: The can be interchanged with the Mindful Foods Golden Granola
