This Poached Mint Apple recipe is perfect when you want an easy and sweet dessert. If you haven't tried a poached apple, it's a must. The apple gets nice and soft and the maple syrup and vanilla pair perfectly. Prepare it for when you have guests or have it for the morning to slice up onto a granola bowl.

Ingredients

1 x Madame Flavour Mint tea bag

1 ½ cups boiling water

1/3 cup maple syrup

1 tsp vanilla extract

3 small apples, peeled and cored

Crumble:

½ cup rolled GF oats

2 tbsp desiccated coconut

2 tbsp almond meal

1 tbsp coconut oil

1 tbsp maple syrup

1 tsp vanilla extract

Method:

  1. Place the Mint tea bag into a small saucepan and pour the boiling water over the top. Let the bag steep for 10-15 minutes.
  2. Remove the tea bag, squeezing it to release as much liquid as possible.
  3. Stir in the maple syrup and vanilla. Add the apples and extra water to barely cover, then bring to a simmer. Cook for 20-25 minutes, or until the apples are tender.
  4. Remove the apples and set aside.
  5. Bring the poaching liquid to a rolling boil and boil for 30 minutes until syrupy.
  6. To make the crumble, combine everything into a small food processor and pulse to combine. Add a splash of water if needed.
  7. Place apples on a plate and spoon some of the crumble on top.
