This Protein Granola recipe is easy to make and perfect to have on hand every week. Store it in your cupboard and have it for breakfast, put it in a jar and have it as a snack or pair it with a dessert. Try switching up the protein powder flavour week-to-week and you'll never get bored with it!
Ingredients
2 cups rolled GF oats
1 cup coconut flakes
½ cup buckinis
1 cup roughly chopped almonds
½ cup nut butter of choice
½ cup maple syrup
¼ cup melted coconut oil
1 x packet (2 serves) Happy Way Protein Powder
Method:
- Preheat oven to 160C and line 2 baking trays with baking paper.
- In a large bowl, combine the oats, coconut, buckinis and almonds.
- In a small bowl, mix the nut butter, maple syrup, coconut oil and protein powder until smooth and creamy
- Pour the wet mixture over dry ingredients and mix to fully combine.
- Press onto lined baking tray – spread flat and bake for 25-30 minutes or until golden brown.
- Let cool completely before breaking apart.
- Store in airtight container in a cool dry place.
