Protein Granola Recipe

This Protein Granola recipe is easy to make and perfect to have on hand every week. Store it in your cupboard and have it for breakfast, put it in a jar and have it as a snack or pair it with a dessert. Try switching up the protein powder flavour week-to-week and you'll never get bored with it!

Ingredients

2 cups rolled GF oats

1 cup coconut flakes

½ cup buckinis

1 cup roughly chopped almonds

½ cup nut butter of choice

½ cup maple syrup

¼ cup melted coconut oil

1 x packet (2 serves) Happy Way Protein Powder

Method:

  1. Preheat oven to 160C and line 2 baking trays with baking paper.
  2. In a large bowl, combine the oats, coconut, buckinis and almonds.
  3. In a small bowl, mix the nut butter, maple syrup, coconut oil and protein powder until smooth and creamy
  4. Pour the wet mixture over dry ingredients and mix to fully combine.
  5. Press onto lined baking tray – spread flat and bake for 25-30 minutes or until golden brown.
  6. Let cool completely before breaking apart.
  7. Store in airtight container in a cool dry place.
