Almond Choc-Chip Cookies

We're always on the hunt for a delicious cookie recipe that's not only a cinch to make but free from refined-sugar. These almond choc-chip cookies are made using the Nirvana Stevia and offer just the right amount of sweetness to satisfy your cravings. Enjoy fresh out of the oven with a cup of your favourite herbal tea!

Ingredients:

  • 1 cup almond meal
  • ½ gluten free flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 1/3 cup almond butter
  • 2 tablespoons melted coconut oil
  • ¼ cup almond milk or water (I used water)
  • 25 drops Nirvana Stevia
  • 2 teaspoons vanilla extract
  • ½ cup mini chocolate chips

Method:

1. Preheat oven to 160 degrees (fan forced) and line a baking sheet with baking paper.

2. In a large bowl, combine the almond meal, flour, salt and baking powder.

3. Mix in the almond butter, oil, milk, stevia and vanilla until well combined then fold in chocolate chips.

4. Spoon about 2 tablespoons of dough into your hands to form cookie and add to baking sheet.

5. Bake in oven for 12-15 minutes.

6. Allow the cookies to cool then enjoy!
