Recipe: Caramel Hemp Shortbread Bars

You had us at the word caramel! Offering a delicious mix of chocolate and nut butter with the goodness of hemp, naturally sweetened with maple syrup and free from refined sugar, these caramel hemp shortbread bars made using the Hemp Foods Australia Spread (which you'll find in the October Conscious Box) are sure to be a hit. Hemp butter shortbread cookie base:

1.5 cups almond flour
1/4 cup coconut flour
1 tbsp Hemp Foods Australia Hemp Spread
3 tbsp liquid coconut oil
3 tbsp maple syrup

    Caramel centre:

    1/2 cup Hemp Foods Australia Hemp Spread
    3 tbsp coconut flour
    2 tbsp maple syrup
    1 tsp vanilla extract

      Dark chocolate topping:

      100g dark chocolate, chopped up


        1. Line a square pan with baking paper.
        2. In a medium bowl, mix together shortbread base ingredients until well combined.
        3. Press the batter into the dish to form the base. Place in the freezer.
        4. To make the caramel centre, mix together the hemp spread, coconut flour, maple syrup and vanilla extract in a small bowl and set aside.
        5. Melt chocolate in the microwave until fully melted.
        6. Evenly spread the caramel layer on top of the base then the melted dark chocolate on top.
        7. Place in the freezer to set for about 1 hour.
        8. Slice into 12-14 bars and enjoy!
