These cookies combine the goodness of dark chocolate with the added antioxidant benefits of matcha to create a sweet treat you're not going to want to share!
Recipe: Choc Matcha Cookies
Ingredients
1 egg
1 tbsp Jomeis Matcha Latte powder
1/4 cup runny tahini
1/4 cup honey or maple syrup
1/2 tsp baking soda
1 cup buckwheat flour
1-2 rows of your favourite dairy-free dark chocolate, to drizzle on top
Method
1. Preheat the oven to 160ºC. Combine the egg, tahini, maple syrup and Jomeis Matcha Latte powder in a large bowl and stir well.
2. Sift in the buckwheat flour and baking soda and fold to combine.
3. Roll the cookies into nine evenly-sized balls on a lined baking tray. Using the back of a damp spoon (run it under the tap and shake dry; repeat after every second or third cookie to make sure it doesn't stick), press each cookie flat.
4. Place in the oven for approximately 40 minutes, or until the edges are golden.
5. Allow to cool. Melt the dark chocolate in the microwave in 20 second intervals, stirring between each time. Using a spoon, drizzle the chocolate over the cookies. Allow to cool and enjoy!
