This rocky road recipe is a real game-changer! Vegan, gluten-free and dairy-free, it consists of only a few easy ingredients and is a cinch to make.
Ingredients
150g vegan chocolate
1/4 cup dried prunes, roughly chopped
1/4 cup popcorn (I like to use Messy Monkeys Lightly Salted & Sweet Popcorn)
1 tbsp dried cranberries
1 tbsp pistachio nuts
1 Blue Dinosaur Cheesecake Base Bar, roughly chopped
Method:
1. Melt the chocolate in a microwave-proof bowl in the microwave. Melt for 30 second intervals and stir in between.
2. Add a thin layer of chocolate to the lined bottom of a small takeaway container or lunch box.
3. Add the fillings to the remaining melted chocolate and gently stir to combine.
4. Add remaining chocolate and fillings to the container and place in the freezer for 15-20 minutes to set.
