This month at GMB, we're talking all things gut health, so you can say this probiotic passionfruit soda cake really hits the brief! It's made from a number of gut-friendly ingredients including chickpea flour, banana and almond meal, but the best part is, the star contender is none other than a can of soda.
Ingredients: Serves 12
1 cup mashed banana
½ cup passionfruit pulp (about 4 passionfruit)
½ cup Nexba Live Sparkling Water - Passionfruit
¼ cup melted coconut oil
½ cup coconut sugar
250g chickpea flour, sifted
1 cup almond meal
2 tsp baking powder
Topping:
2 passionfruit, pulp
2 tbsp flaked almonds
Method:
- Preheat the oven to 160°C (fan forced). Grease the base and sides of a 20cm cake pan and line with baking paper.
- In a large bowl, mix together the mashed banana, passionfruit pulp, sparkling water and coconut oil until smooth and creamy.
- Mix in the coconut sugar, chickpea flour, almond meal and baking powder and combine well so there are no lumps.
- Pour mixture into cake pan.
- Bake in the oven for 50 minutes or until toothpick comes out clean.
- Allow the cake to cool for 30 minutes.
- Top with the passionfruit pulp and flaked almonds.
- Serve and enjoy.
