This dairy free Snickers Cheesecake recipe is for all you Snickers lovers. Instead of using a real Snickers bar that is filled with sugar and artificial flavours, we use Macro Mike's Game Changer Bar which is basically a healthier protein Snickers bar. You won't even miss the real thing. Make this next time you're going to a party, it'll be a crowd favourite.
Ingredients: Serves 16
Base:
1 ½ cups rolled GF oats
1 cup desiccated coconut
¼ tsp sea salt
3 tbsp maple syrup
3 tbsp coconut oil
2-3 tbsp water to blend
Filling:
2 x 270ml light coconut milk, canned
1/3 cup maple syrup
1 tsp vanilla bean paste
2 tbsp gelatin powder
1 x Macro Mike Game Changer Bar chopped up into small pieces (don't be afraid to add more)
* add ¼ cup peanut butter for a more decadent pie
Toppings:
¼ cup peanut butter
¼ cup melted dark chocolate
1/3 cup roasted peanuts
Method:
- Add the oats and coconut to a food processor and blend until a fine meal is achieved.
- Add the salt, maple syrup, coconut oil and water. Blend to form a dough.
- Transfer mixture to prepared pie pan or baking dish and use your fingers to press it evenly as possible up the sides of the dish. Refrigerate to firm up.
- In the meantime, prepare the filling by adding coconut milk, maple syrup, and vanilla to a small saucepan and bring to a gentle bowl.
- In a small dish remove ¼ cup of the heated liquid and stir in the gelatin to dissolve.
- Add all of the liquid, gelatin mixture and peanut butter to a blender and blender until smooth and creamy.
- Sprinkle the Game Changer bar over the pie base then pour over the filling mixture.
- Refrigerate for 6-8 hours or until set.
- Drizzle with peanut butter, melted chocolate and roasted peanuts.
- Slice and serve.
