A few weeks back we celebrated cultural diversity in the GMB office. Here is our Marketing guru, Elli's spicey vegan taco's. They were a total hit with the team!\nIngredients for Tacos\n\nGF wholegrain tortilla's (or cos lettuce for a low carb alternative)\n1 Red onion diced\n1 Fresh corn, Kernels removed\n2 Tomatoes diced\n1 Cucumber\nshredded lettuce\n400g tin of black beans, rinsed\n½ Limes\nSalt and pepper to taste\n\nIngredients for Guacamole\n\n1-2 Avocados (depending on your Guac obsession)\n1 Small red chilli diced finely\n1 Lime\n1 Handful of cherry tomatoes diced\nSalt and Pepper to taste\n\nIngredients for the Spicy Salsa\n\n2 tomatoes,seeded and chopped\n1 green onions\nfresh chilli, seeded\nhandful of chopped fresh cilantro\n2 tsp fresh lime juice\n1\/4 tsp ground black pepper\n1\/4 tsp garlic powder\n\n \n\nMethod:\n\n\n\nCombine the onion, corn, tomato, cucumber and beans in a bowl and squeeze fresh lime on top. 2. Add salt and pepper to taste. 3. For the Guac, put the avocado into a bowl and add the chilli tomato and squeeze in the lime juice. Combine (I like to use a potato masher). 4. Add salt and pepper to taste 5. For the Salsa: blend the tomatoes, onion, chilli and cilantro to desired consistency. Transfer to a bowl, and mix in the lime juice, black pepper, garlic powder, and salt. 6. Cut off the base of the lettuce and wash the leaves. 7. Grab a tortilla or lettuce leaf and fill with a few spoonful’s of the taco mix and add a doll up of Guac and salsa on top. 8. Enjoy!
